Peepshow blonde bombshell Holly Madison emailed me yesterday after she wrapped her 2011 calendar shoot at the El Dorado Royale resort on the Mayan Riviera in Mexico. She told me everything went well and that the locations used were unique and spectacular.

“The toughest part will be narrowing it down to just 12. We need 300 months in the year for all the great photos,” she joked. Holly says she will post photos of her south of the border sojourn of two days of fun and exploration on the Mayan Riviera on her blog when she returns to Las Vegas this weekend.

Rehearsals for the numbers and routines being added to Peepshow start on Monday, and Holly said she wants to spend some of her spare time back here working with an animal shelter. Peepshow celebrates its first anniversary in April.

*The reaction to celebrity chef Rick Moonen’s Upstairs Fine Food Dining Experience at his Mandalay Bay restaurant RM Seafood has been truly overwhelming. Rick emailed me yesterday after our story about it was posted to say he’s had to expand it from Tuesdays each night through Saturday, but for his own sanity, he’ll go dark on Sundays and Mondays each week. Now there’s room to meet the incredible demand!

Mia and Lilly were joined by former teammate Tisha Venturini.The trio were members of the team that won the 1999 World Cup. … Legendary singer Paul Anka took a tour of the downtown Cleveland Clinic Lou Ruvo Center for Brain Health and posed for a photo with founder Larry Ruvo. … Magician Teller checked out Human Nature at Imperial Palace and posed for a photo with the four Australian Motown-sounding singers from Down Under. … Congrats to Larry Edwards for his impressions of Tina Turner on their fifth anniversary. Our Merry Mayor of Mirth Oscar Goodman presented Larry with a key to the city to mark the milestone. *It’s another big sports weekend as the 2010 Winter Olympics get underway in Vancouver, B.C. Here, we have the excitement of the USA Sevens Rugby Tournament tomorrow and Sunday for 16 international teams in 44 matches. The Rockhouse Bar & Nightclub at center Strip will get down and dirty to host the official after-party tomorrow.

First, though, tonight champion swimmer and model Amanda Beard hosts an Olympics opening ceremony party at Lagasse’s Stadium in the Palazzo. The seven-time Olympic medalist will relate some of her favorite memories of winning the gold while representing the United States. She’ll be presented with a cake after her 8 p.m. chat with fans and admirers, and then stay to watch tonight’s opening ceremonies.

Now it’s time for us to go for the gold and jump as high and fast as those skiers competing in Canada with our weekly package of highlights that never go downhill. It’s what we affectionately refer to around here as the ROYAL ROBIN RUNDOWN:

Bellagio Celebrates Year of the Tiger

*Chinese New Year festivities begin at Wing Lei’s in the Wynn with dim sum extended for four hours daily through Feb. 18, plus extended dinner hours for the same time period. The two-week festival is traditionally ushered in with lavish feasts, bold flavors and bright colors. The beginning of the Chinese Lunar Year will be marked with the Lion Dance at 7 p.m. at the Wynn south valet entrance in celebration of the Year of the Tiger 4708. At Caesars Palace, the Lion Dance is set for the hotel’s front entrance at 5 p.m. Caesars execs will paint the eyes of the lion and present red envelopes of money and the traditional lettuce gift. Lion Dances at Harrah’s properties are 7 p.m. tomorrow at Harrah’s, 8 p.m. at Imperial Palace and 9 p.m. at the Flamingo, and on Sunday at 1 p.m. at The Rio, 2:30 p.m. at Bally’s, 3 p.m. at Paris and 5 p.m. at Caesars Palace. Two Caesars restaurants, Noodle #9 and Sea Harbour, have special Chinese New Year menus.

*New Palms cabaret lounge singer pianist Jimmy Hopper starts his month’s run of Sunday night shows mixing the wild of Freddie Mercury and the classical of Andrea Bocelli.
