It was a nonstop weekend of fun for singer-songwriter, actress, model and American Idol alumnus Katherine McPhee when she and her husband Nick Cokas checked into the Palazzo. The sultry performer was on The Strip for an appearance at Azure Pool and to host a daytime party to celebrate the launch of Belvedere pink grapefruit vodka. The A.I. Season 5 runner-up is the first guest to kick off the new Stereo Love Saturdays parties.
Kat checked into the Siena Suite wearing cut-off jean shorts, flip flops and a cream crop top to show off her short brunette hairdo. She changed into a loose-fitting tunic top with leggings for her first stop at Phantom -- the Las Vegas Spectacular and then went to chef Sammy DeMarco’s First Food & Bar for dinner, wine and dessert. “Loved the show, loved the dinner, loved the views,” she said. The couple took a few goofy pictures in the photo booth.
The next morning, the couple, who wed in February 2008, worked out at Canyon Ranch SpaClub and then enjoyed massages in advance of her poolside performance. She wore a Joie jumpsuit for her red carpet walk, and although she gave fitness advice -- “stay away from bread and eat lean” -- she couldn’t resist Wolfgang Puck’s caviar and smoked salmon pizza with a chicken Caesar salad in her VIP cabana.
With sky-high temperatures, Kat halfway through her performance took off her stiletto heels and gold necklace and jumped off the stage and right into the water where she continued singing for her fans. “I’m having fun here hanging at the Palazzo and celebrating the pink grapefruit vodka,” she said.

She returned to the stage, cooled off by spritzing herself with Evian water misting and sang her self-written song “Surrender.” The crowd sang along to her rendition of Kings of Leon’s hit “Use Somebody” and wouldn’t let her leave until she sang “Somewhere Over the Rainbow.”
She went back into the pool to cool off after the show and pose for photos with fans in the water. Kat and Nick had dinner at Tao in the adjoining Venetian. “It’s my favorite place,” she said. “I love the sea bass and the lobster wontons.”
