Showbiz stars are adding a touch of mariachi and margarita merriment to this year’s Cinco de Mayo celebrations. It kicks off at 11 a.m. today when CHiPs actor Erik Estrada hosts a 12-hour fiesta at Tacos & Tequilas (T&T) in the Luxor that includes a spicy senoritas Miss Hot Tamale contest with a $5,000 cash prize.

As chief judge, Erik will be joined by former Baywatch star and current Fantasy headliner Angelica Bridges and Extra’s new Las Vegas reporter Alicia Jacobs. Also expect Carrot Top, who returns today from vacation, and Thunder From Down Under to be there for tonight’s crowning.

Also on tap throughout the day at T&T will be human rooster fights known as “cock-a-doodle duels” and, on this most sacred of party days, the unveiling of the mysterious Black Mambo Margarita. The Tequila Temptresses will be there all day, too, serving up shots to take advantage of whatever state you’re in at the Mischieve Photo Booth and airbrush tattoo station.

Sammy Hagar's grand opening of Cabo Wabo Cantina at Planet Hollywood's Miracle Mile on Dec. 4, 2009.

Over at Dos Caminos in the Palazzo, Napoleon Dynamite star Efren Ramirez will play emcee with magicians, models and luchadores starting at noon leading up to tonight’s blast with DJs Cyber Kid and Chonz.

Rocker Sammy Hagar has organized a rock ’n’ roll fiesta in his Cabo Wabo Cantina, and one partygoer will win a one-of-a-kind autographed Sammy Hagar guitar.

Over at actress Eva Longoria Parker’s Beso in Crystals at MGM’s CityCenter, there will be a festive Patron party on the newly opened outdoor patio. Three new Cinco de Mayo-inspired items will be debuted for the summer menu.

Here’s the ROYAL ROBIN RUNDOWN of other parties and events:

*There’s a sexy senorita contest with cash and prizes at Lavo in the Palazzo, even though it’s an Italian restaurant!

*The Rockhouse Bar & Nightclub at Center Strip launches its 55 days of summer with $5 shots, margaritas and two select beers. If you’re from out of town, make sure you buy the souvenir 80-ounce “guitar,” which will hold more than enough frozen margarita for the fiesta.

*Diego at MGM Grand has a special $49 per person tasting menu with a goat’s milk caramel flan and crispy cinnamon crepes to top off the monumental meal.

*Top Chef Masters competitor Susan Feniger, who returns to the show with fellow Mandalay Bay chef Rick Moonen tonight, has created specialty cocktails that include the $20 Jeffe Grande (Big Boss) Margarita, which will keep you dancing all night long to the 12-piece mariachi band.
