Top Chef fans and readers, we’d like you to meet Jet Tila. The executive chef of Wazuzu at Encore knows a thing or two about what it takes to be a top chef. That’s why we’ve enlisted Tila’s help in chronicling the scores and spills during Top Chef: Las Vegas.

Every Thursday in The Jet Stream, Tila will share his thoughts on the previous night’s episode, bringing a straight-from-the-kitchen sensibility to the commentary. The Los Angeles native grew up cooking with his Chinese-Thai grandmother and working in his family’s Royal Thai Cuisine restaurant chain, eventually turning his love of cooking into a career after graduating from culinary school. Since he was young, the kitchen has been his second home. So when Tom Colicchio scolds the chef’testants for under seasoning their stir fries or overcooking their sea bass, you can bet Tila will have a thing or two to say about their techniques and talents. Thoughts on Top Chef from one of Vegas’ top chefs – a pairing made in tasty TV heaven.
