When lead bartender Jerry Vargas met tall, lychee-sweet St-Germain liqueur, well, it was love at first sip, and he was inspired to employ it to build upon a classic gin cocktail, the French 75. Supposedly named for the similar kick put out by a French 75mm Howitzer artillery piece, the French 75 cocktail is traditionally a mixture of gin, champagne, lemon and sugar. By substituting the St-Germain and ginger syrup for the sugar component, and by adding wintry garnishes such as pumpkin spice or cinnamon, Vargas has brought the refreshing, Francophone seaside libation in for the winter.
1 oz. Bombay Sapphire Gin
0.5 oz. St-Germain Elderflower Liqueur
0.5 oz. freshly squeezed lemon juice
0.5 oz. fresh ginger syrup
Top off with champagne
Combine gin, St-Germain, lemon and ginger syrup over ice in a pint glass. Shake and strain over fresh ice in a tall glass. Top off with champagne, and garnish in winter with pumpkin zest and pumpkin spice or a cinnamon stick and cinnamon-sugar rim.
