Cocktail of the Week is evolving! In an 11-hour marathon session, I hit the town with videographer Trent Ogle for the first-ever 702.tv Tour de Cocktails. From the Strip to Downtown, we dropped in on nine bartenders—like Simon’s Melissa Allen—who whipped up their venue’s best signature cocktails for the cameras. Brown Sugar, $13: Simon

Ingredients:

1.5 oz. Stoli Vanilla vodka

1.5 oz. pineapple juice

1 tsp. brown sugar

Method:

Fill a cocktail tin with ice. Combine all three ingredients, cover and shake vigorously to incorporate the sugar. Strain into a chilled cocktail glass.
