While the Las Vegas location is still a relative infant—it started serving Brazilian, Japanese and Peruvian fare at the Palazzo last summer—it’s getting in on the party with this month’s countdown promotion: a five-course menu designed for a celebration dinner at the James Beard Foundation. The prix fixe meal, available March 10-19 ($110 per person with alcohol pairings, $80 without), features olive oil-poached king prawns, a dueling plate of seared A5 Kobe beef and braised wagyu short rib, a sushi sampler and pear ceviche for dessert. Hey, where’s the birthday cake?
