Watermelon salad at Todd’s Unique Dining The best way to chill out is to consume water. You don’t have to drink it; you can enjoy delicious vegetables and fruits with high water content. Todd Clore, Henderson’s favorite chef, has a watermelon salad on his menu this time of year, with sweet, juicy fruit, roasted pumpkin seeds, feta cheese and some tiny micro herbs. Cucumber gimlet at T-Bones Chophouse What’s cooler than a cucumber? Gin. Seems like every bar has a cocktail combining the two, but the steakhouse at Red Rock Resort has it down. They pour Hendrick’s, which already has a cucumbery essence, and then muddle the green veggies with fresh lime juice and rock candy syrup. Oyster sampler at RM Seafood Sushi sound good? Raw, chilled pieces of fish are small, light and refreshing, and RM Seafood does some of the best in town. But I prefer oysters, slippery, briny and satisfying, with a dash of horseradish to get that endorphin rush going. Frrrozen hot chocolate at Serendipity 3 While we’re on the Strip, why not swing by Caesars Palace for the best walk-by treat this side of Luv-It? All kinds of ice cream delights abound at Serendipity 3, but I’ll take the icy, rich cocoa goodness of the Fro-Ho, sort of a cross between a Fudgesicle and a milkshake. 3570 Las Vegas Blvd. South, 731-7373. The Barbie at Slidin’ Thru Your appetite might sink as the mercury rises, but it’s still summer, and I still want meat from the grill or barbecue. Eating large portions of charred animal flesh is only gonna heat your body from the inside as all your blood rushes to aid digestion. So shrink it down: Go the mini-burger route. Unless you’ve been hiding under a rock, you know Vegas’ very own food-truck crew is knocking it out of the park with fresh-made, gourmet sliders. The Barbie is the perfect summer burger in a convenient three-bite format—Angus beef with melted cheddar cheese, a bit of bacon and fried onion for crispy bliss, and sweet barbecue sauce and caramelized jalapeno to push the flavors over the top. Nam Tok Salad at Pin Kaow Spicy food cools you off. It’s a fact. Those beads of sweat on your forehead will evaporate, and that’ll feel nice, so kick it up a notch. There are three locations of your friendly neighborhood Thai joint Pin Kaow scattered around the Valley, and plenty of spicy salads on the menu. Nam Tok has grilled, sliced beef or pork, red and green onions, and cool, leafy basil, mint and cilantro in a sweet, sour and spicy dressing. Cold Szechuan noodles at Yun Nan Garden If you really want to sweat some heat out, Chinatown’s Yun Nan Garden may be the place for you. This is some of the spiciest food anywhere, and cold Szechuan noodles offer the best of both worlds. Peppercorns, green onions, bean sprouts and a thick paste of red chiles mingle among chilled, chewy noodles. This is serious eating, no matter the season. 3934 Schiff Drive, 869-8885. Frozen Yogurt at Menchie’s Switch from ice cream to frozen yogurt when we get into the hundred-and-teens. You’ll save yourself quite a bit of calories and that heavy stomach, post-sundae feeling. And with endless toppings available at all the do-it-yourself yogurt joints around town, you can go crazy with the flavors. Spanish Trampoline at Rhumbar Time for a cocktail. With its space-age cigar bar and misty, tropical patio, Rhumbar at the Mirage is one of the coolest spots for daytime drinking, pun intended. The classic rum concoctions are all good choices, but you can really smooth things out with the Spanish Trampoline, which blends the fermented sugarcane liquor Cachaca with tangerine, mint and lime.
