Grimaldi’s expands - and Summerlin celebrates

Until a few months ago, Henderson had bragging rights as the Vegas valley's pizza paradise. You can get a slice on every corner, but the best pizza joints in town were all fixed in the picturesque southeastern suburb and its Green Valley neighborhood. That changed when Grimaldi's opened its second location in March in Summerlin.
A coal-fired brick-oven pizzeria, Grimaldi's is a New York institution that expanded to Arizona, Florida and Texas in recent years, and local pizza lovers have long been digging the flavor and fresh ingredients at the original Richmar Plaza location on the competitive restaurant row of South Eastern Avenue. The new place is in Boca Park, the once-powerful Summerlin shopping stronghold. We west-siders couldn't be happier; new delicious food is sorely needed here as chains like Cheesecake Factory, Gordon Biersch and PF Chang's dominate the area.
Grimaldi's 2 is a little more comfy and open than in Henderson, with workers tossing dough at the back of a long dining room and a nifty little bar and lounge area up front. Now is the time to enjoy antipasto or a Caprese salad on the patio, before the extreme heat returns. I advise you eat early, as families unfamiliar with Grimaldi's are quickly discovering how tasty this pizza can be, and the Boca parking situation can be frustrating. But it's worth it for a crispy, chewy crust dotted with homemade pesto, roasted red peppers and the best fresh mozzarella in town. That's my favorite, anyway. Other gourmet toppings include kalamata olives, Italian sausage, ricotta cheese and artichoke hearts. Thanks for growing, Grimaldi's. Welcome to Summerlin.
