Ready your chopsticks and ladles, Pho Saigon 8 has spawned a new restaurant on the east side.

Not much to look at, but inside you’ll see flocks of locals bent over giant bowls of pho and slurping with religious devotion. Served with a variety of meats, like steak, brisket and tendon, or chicken or tofu, the pho here is full of bright, fresh flavors. 5650 Spring Mountain Road. 9 a.m.-10 p.m., daily. 248-6663. 9055 S. This place is always packed at lunch, mostly with families and local Vietnamese businessmen. The extensive menu is packed with delicious things you've probably never tasted before, such as Ninh Hoa pork sausage rolls, barbecued shrimp on sugar cane and grilled-lemongrass sliced beef, all of which are served with a pile of herbs, condiments and other flavor enhancements, at no extra charge.
