Please pass the guacamolito!

It seems simple: tomatillo, avocado, jalapeño, cilantro, lime and spices. But it tastes complex: bright and tangy, salty and spicy, smooth and delicious. It’s guacamolito sauce, it’s highly addictive, and it’s got me running back to the farmers’ market where Scott and Dawn Trujillo—aka True Foods—sell their terrific salsas.

This husband-and-wife operation has been dishing out fresh salsa since October, a side gig for a pair of teachers born and raised in Las Vegas. There are four varieties: the guacamolito, the pico 2.0 (standard pico de gallo blended a bit for texture), taco shop green and death salsa. Yeah, that last one’s super hot.
True Foods’ salsa is usually available at the Wednesday Farmers’ Market at Bruce Trent Park and at the weekly Fresh52 and Downtown FEED markets. The Trujillos are hoping to expand their business to Whole Foods, and they’ve got three more flavors on the way. I don’t know if I’ll have room; my refrigerator is stocked with guacamolito.
