Respect the cheese at Rachel’s Kitchen

Among life’s rare certainties are these: Shakespeare is timeless. Sophia Loren will die beautiful. Grilled cheese sandwiches never disappoint (unless the “cheese” is spray-on).
That last one is definitely true at Rachel’s Kitchen, where the Ultimate Grilled Cheese ($7.75) is Gruyere, cheddar and Parmesan melted around roasted tomatoes on grilled sourdough. The crust crunches into a gooey core of whisperingly sweet, nutty, pungent umaminess. The ratios are so right that even a light eater can finish both halves, especially next to fresh greens garnished with carrot, cucumber and spicy radish.

“It’s one of my favorites,” says Stacy Bleser, who co-owns the Green Valley Ranch location and doesn’t shy away from the occasional grilled cheese for breakfast. “It’s worth it when you want to cheat.”
If you want to cheat and be good in the same meal, Bleser recommends pairing the sandwich with a fresh-squeezed juice packed with antioxidants. Whether you’re 5 or 50, this combo hits the spot
