Cure that tripa taco craving at Taqueria el Palenque

Unless you live nearby, you probably haven’t been to Taqueria el Palenque. On Lake Mead between Civic Center and Pecos, it’s on the way to practically nothing, but it’s worth the trip on its own.
Inside the garish exterior—red and yellow with a rainbow shade structure—live some of the best tacos in town. Regular tacos cost $1.50, but you should upgrade to the larger hecha a mano tortillas, prepared to order for $2.50 apiece. The standard taco fillings are exemplary, including a well-seasoned carne asada and a flavorful, oh-so-greasy chorizo.
You’ll find the most addictive ingredient, however, way down at the bottom of the menu: tripa. Even if you typically shy away from offal, you should give these intestines a try. The perfectly fried meaty morsels are less minerally and have more texture than most Valley versions. Don’t be scared.
