Dancing in the moonlight to some of the biggest DJ names in the world, poppin’ champagne bottles and drinking Millionaires Sangria. That’s the way we do in Las Vegas, thanks to Brian Affronti, general manager of XS and Tryst Nightlife Operations.
Day meets night on Sundays at XS, where Night Swim welcomes locals for a splash after dark. And no late-night dip would be complete without the appropriate beverage. Sold by the carafe ($300) and only available at Night Swim, Hennessy Black Millionaires Sangria is made with Hennessy Black, a mixable cognac that marinates with Grand Marnier, fresh fruit, berries and mint. When the time is right, pop the Moët Ice, top the sangria mixture and prepare for a bubbly treat. As for the attire, swimwear is highly encouraged for optimal satisfaction.

10 oz. Grand Marnier

1 bottle Moët Ice Impérial
Method:
Combine all ingredients except Moët Ice and macerate. Set aside for up to 24 hours prior to serving. Tableside presentation: Add one bottle of Moët Ice to the sangria mixture and serve over ice in a wine glass. Makes one 60 oz. pitcher.
