China Poblano celebrates Chinese New Year with a special cocktail

The Plum Delight features an unusual ingredient: bean paste.

At China Poblano, Cocktail Innovator Juan Coronado has crafted a seasonal drink to celebrate Chinese New Year (February 10) featuring an unusual ingredient: bean paste.

“The bean paste is a traditional ingredient in Asian desserts. I’ve always been curious and challenged to include [it] into a cocktail,” Coronado says. “I took a risk. The result is something that has a delicate booziness, a silky plum aroma and a surprising bean paste accent.”

The libation—silky, exotic and pure yum—is also quite symbolic. The plum blossom is the national flower of the Republic of China and the first to bloom each winter, and it adorns costumes and props during Chinese New Year festivities. Considering winter in China can reach 10 degrees below zero, that’s one brave bud.

Plum Delight

Ingredients:

1 bar spoon of bean paste

½ oz. lemon juice

1 oz. plum syrup

½ oz. Luxardo Maraschino

2 oz. Chairman’s Reserve Rum

mini Chinese rose petal (garnish)

Method: Add all ingredients to a shaker with ice and shake. Put ice sphere into glass and double strain mixture into glass.
