The first taste of Light Group’s Mandalay Bay takeover is now available at Red Square. You probably haven’t been to the Russian-themed restaurant and cocktail spot in a while. Don’t worry, you can still don a fur coat and down an icy shot in the vodka vault. The biggest changes are on the menu, where Light chefs Brian Massie and Chris Conlon have engineered a fun selection of tasty small plates to get things started. Kubideh-style skewers of chicken, beef and lamb with warm pita and yogurt sauce are deliciously spiced, but the most addictive appetizer is the smoked salmon pizza ($18), a crispy tortilla layered with cream cheese, ribbons of luxurious fish, capers, pickled onions and caviar. After this restaurant perestroika, we can’t wait to see what else Light does at Mandalay.
