Various cuts of beef like the bone-in filet, New York strip steak and Bone-in ribeye come three ways: pepper steak, chimichurri and traditional. If you’re feeling a bit more indulgent, try the six-ounce Japanese Kobe beef steak, and be prepared to be wowed. In addition to meat options, seafood like olive oil poached halibut, Dover sole and pinwheel of salmon, with butternut squash and apple risotto are all fabulous.

The food at Botero was absolutely phenomenal. The decor was very inviting and fun and the ambiance really gets you ready for a great night. I would recommend the filet with the chimichurri, very tasty. You really get your money's worth dining here and the service was very prompt and accomodating to all of our needs and very helpful in recommending dishes. If you're lookin for great food and a great start to your night, start it at Botero @ Encore!

Fun and classy both describe this restaurant! The service was friendly and knowledgeable. Then on top of all of that the food was so delicious my table stopped talking for a few minutes to simply enjoy the flavors!!! By far, my number one choice when I head back to Vegas
