No, you have not touched a nerve, it's just I have lived in this town long enough and eaten at enough of its restaurants to know bulls--t when I see.

I find it quite interesting that you of all people are criticizing those who give restaurant bad reviews. You do this regularly without giving any problem or consideration to the people you insult so you can feel better about the mediocre work you do in your own restaurant. If I am paying good money at an establishment that is suppose to be five star, you better believe that I am going to say something if it is below my expectations. Anyone who is paying their money to eat your food has a right to an opinion about it, good or bad. The only reviews a chef wants to accept are the positive ones. Heaven forbid if someone finds something that could be improved.

You are at the Encore; you are supposed to be able to execute perfect meals time after time. This is why they hired you because you gave the impression that you were capable of handling the pressure. I guess they were wrong. Stop whining and improve your service. It seems the only people who get good service in your restaurant are the celebrities you recognize and want them to tweet about you. It seems that you are nothing but a celebrity whore and only want to please those who can make you famous.

You and the many other arrogant chefs in the industry think that the public is stupid and you have to tell them what they should like. Food is subjective and people either enjoy your interpretation of what you create in the kitchen or they don't. For you to attack the people who do no like something about your restaurant is childish and speaks volumes about you as a professional.

You are making food for the public; therefore the public is the ultimate food critique. If you only want people to say nothing but positive things about your restaurant, invite only your good friends to eat there and have them post sugary sweet reviews for you (which I am sure you have done already). Or you can butter up the food critiques that have given you bad reviews so they can change their minds about their past critique of your food and begin to promote you as God's gift to the culinary world( which you have also done i.e. John Curtas).

I read what the Yelpers wrote about their experience at your restaurant. If you receive criticism about your restaurant about the same issue, maybe you should use this as an opportunity to improve yourself instead of attacking people who are being honest. Mature chef takes things in stride and uses the worse complaints to their advantage. It seems you are throwing a temper tantrum because someone said something negative about your restaurant. This is the nature of the beast and if you cannot stand the heat of honesty, maybe you should literally get out of the kitchen.

Very sad to say but you are a very pathetic chef with lots to learn.
