Great column. I think the marketing approach is all askew. Why try and play with the big boys and dumb down a great menu? Vegas appeals to the lowest common denominator. There will always be a line out the door to starbucks in any large casino even if the BEST coffee shop, locally owned, sits right next door, empty. Now that you are serving 'small plates', I'm outta there -- I'm NOT the lowest common denominator and keep trying, FOR THE LOVE OF PETE, keep trying, to find a local awesome flavor that appeals to a very large, broad base of locals (and a handful of curious tourists) that are curious, and would appreciate a great tapas bar as opposed to a great small plate bar... I can get that anywhere.
